  • Cold island gaspacho and Parmesan cheese petals
  • Red tuna tartare, sesame seeds and mango, home made chips
  • Parma ham and mango exotic salad
  • Orange carpaccio in saffron syrup, green olive marmalade
  • Finely sliced chicken salad, fresh local coconut
  • Ice-cold local cucumber soup, island flavor
Hot Starters
  • Hot goat cheese salad, balsamic vinegar mesclun, grilled red pepper
  • Local fish soup, spicy creole sauce and crostini
  • Pan fried « foie gras », Pineau juice, caramel cooking apple*(+10€)
  • Red snapper & shrimp Singapore soup, curry & coconut cream
Main Course Dishes
  • Red mullet filet, enhauced by an infusion of rosemary
  • Local Mahi Mahi in a curry coriander and grappes sauce
  • Grilled prawns, lime “aioli”, served on a banana tree leave
  • Traditional Bouillabaisse made with local fish, toast & sauce “rouille” *(+10€)
  • Honey and mixed spices Peking duck, home-made mashed potatoes
  • Duck confit “shepherd’s Pie” with sweet potatoes & local spice
  • Rack of lamp with roasted garlic, in herbs pastry
  • Grilled Beef tenderloin, Cognac & pepper sauce
Desserts
  • Walnet “Palet”, fig ice cream and fruit tartare
  • Warm apple tart Tatin, Calvados syrup & vanilla ice cream
  • Traditional « crepes Suzette » flamed in Grand-Marnier
